Hand-dipped chocolate cupcakes with fondant dots

If you like the look of these but don’t have the time or patience to make ganache and dip, you can take a shortcut . . .

Make your chocolate cupcakes (or the flavor of your choice). Once the cupcakes are cool, open a can of chocolate frosting — use the creamy kind, not the whipped and spoon it into a container that will be deep enough to dip the tops of the cupcakes into. Microwave the frosting for 8-10 seconds at a time (stirring after each time you microwave) until it coats the back of the spoon before running off (in other words, don’t heat it until it’s runny). Dip each cupcake once, reheating frosting if necessary, then go back to the first one and dip them all a second time. Let the frosting set a bit before adding decorations (five minutes or so). You can roll out fondant and cut out dots of varying sizes or use any other decorations that appeal to you.
